Summer is definitely one of my favorite seasons (like we have others in Vegas) with all the BBQs, pool parties and delicious seasonal fruit and vegetables. Watermelon seems to be making the rounds around the blogosphere so I figured I’d jump on the bandwagon and make a delicious, healthy and refreshing dessert using the versatile fruit for you and your toddlers. Toddlers will love this treat because it’s very slushy like and tastes like an unhealthy treat you’d find at the gas station (hello Slurpee). Parents and adults will also love it because it’s delicious and can be turned into an adult treat. Simply add some vodka or tequila and you’ll have a great summer drink to sip by the pool. Go ahead and spike the granita, I won’t judge
Watermelon Granita
-Half a large watermelon (about 8 cups), rind removed and chopped
-1 lime, juiced
-1/4 cup of simple syrup* (to taste)
*For syrup, add 2 tablespoons honey or raw sugar to 1/2 cup of water. Heat over low until honey or sugar dissolves.
Add watermelon, lime juice and simple syrup to blender or food processor. Blend until smooth. Transfer watermelon mixture to a large baking dish and place in the freezer. After an hour, scrape the top of the slightly frozen mixture with a fork to create crystals. Repeat this process for 2-3 more hours until the granita is at your preferred texture. Scoop the granita into dishes and serve with chopped watermelon, chocolate chips or favorite liquor for an adult treat. This would also be great with a scoop of vanilla ice cream or frozen yogurt.
